Homemade butternut squash soup is a delightful, comforting dish that captures the essence of fall. Here’s a simple recipe to help you make this delicious soup at home:

Ingredients:

  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream (optional, for a creamier soup)
  • Chopped fresh parsley or chives for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the butternut squash cubes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Roast for 30-35 minutes or until tender and lightly caramelized.
  3. In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.
  4. Add the roasted butternut squash to the pot and stir in the cumin, cinnamon, and nutmeg.
  5. Pour in the broth, bring to a boil, then reduce heat and let it simmer for about 15-20 minutes.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, you can carefully blend the soup in batches in a blender.
  7. Stir in the heavy cream (if using) and simmer for a few more minutes.
  8. Adjust the seasoning with salt and pepper.
  9. Serve hot, garnished with chopped parsley or chives.

Feel free to adjust the seasonings according to your taste preferences. This soup pairs well with a crusty bread or a side salad for a complete meal.

Enjoy!
