Instructions: 

Bring a medium non-stick saucepan of water and 2 tablespoons of vinegar to a boil.

Break eggs carefully into individual cups, small bowls or ramekins. You want to avoid breaking the yolk.

Remove saucepan from heat and immediately add the eggs. Gently add the eggs by tilting the cup, bowl or ramekin into the hot water allowing the egg to slide into the water.   Replace lid.

Set timer for 3-4 minutes for runny eggs, 4-5 minutes for medium.

While they are poaching, toast the bread.

Smash avocado and season to taste with salt and pepper.

Using a slotted spoon remove poached eggs and place on top of paper towel to help drain off any extra water.

Top toast with avocado, and add poached egg on top.  You can more salt and pepper to taste.

 

Additions: you can add spinach or basil as well as drizzle balsamic reduction to elevate the taste!
